  • 1 lb cooked chopped chicken
  • cup chopped apple see note
  • cup finely diced yellow onion
  • 1 celery stalk chopped
  • ¾ cup mayo
  • teaspoon table salt plus more to taste
  • teaspoon ground black pepper plus more to taste
  • Bread or croissants for making sandwiches
  • Lettuce for sandwiches optional

Instructions
 

  • Combine chicken, apple, onion, celery, mayo, salt, and pepper in a large mixing bowl and stir until ingredients are well-combined. Taste-test and add additional salt and pepper as needed.
  • For best results, cover and chill in the refrigerator for at least 30 minutes before serving.
