Ingredients
  

  • 1 lb Polish kielbasa sausage, sliced
  • 1 tbsp olive oil
  • 2 bell peppers, sliced any color
  • 1 large yellow onion, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add sliced kielbasa and cook for 3-4 minutes per side until browned. Remove from skillet and set aside.
  • In the same skillet, add the sliced bell peppers and onion. Sauté for 5-7 minutes until softened. Add minced garlic and paprika and cook for 1 more minute.
  • Return the kielbasa to the skillet with the vegetables. Stir to combine and cook for 2-3 minutes until everything is heated through.
  • Season with salt and pepper. Garnish with fresh parsley if desired and serve immediately.

Notes

For best results, ensure the kielbasa gets a good sear by not overcrowding the pan. This recipe is great served over rice or in a hoagie roll.
